A HEALTHY BREAKFAST YOU’LL ACTUALLY WANT TO EAT

If you overindulged during the holidays, don’t sweat it (we did too). But now that it’s the New Year, it’s time to get back into a healthy meal routine, and why not start with the most important meal of the day: breakfast. Breakfast not only kick starts your metabolism, helping you burn calories, but it also gives you energy, allowing you to concentrate better throughout the day. So skip the donuts and opt for a nutritious superfood breakfast like this tasty acai bowl recipe. Enjoy!

VANILLA CASHEW ACAI BOWL

Serves: 2

Total time: 20 minutes

Ingredients:

Acai Bowl

14 ounces frozen acai puree
1/3 cup coconut milk
1 teaspoon vanilla extract
2 bananas, sliced
1/2 cup flaked + unsweetened toasted coconut
1/4 cup sliced almonds (toasted) + 1/4 cup of chia seeds

Vanilla Bean Cashew Butter
10 ounces raw, unsalted cashews
1 1/2 tablespoons vanilla bean paste
1 teaspoon coconut oil, melted
pinch of salt

Directions:

In a blender, puree the frozen acai with the coconut milk and vanilla extract. Blend until smooth, thick and creamy. Serve immediately, and then cover with sliced bananas, coconut, chia seeds and almonds. Drizzle generously with cashew butter (recipe below!).

Vanilla Bean Cashew Butter
Add cashews to a food processor and blend until smooth, about 6-8 minutes. Once smooth and buttery, add in the coconut oil and vanilla bean paste, blending and again until totally smooth. Add salt to taste and keep blending until ready. Add to your acai bowl, and then store the rest in a sealed container in the fridge.
